Flavor Blends & Fusion Cuisine

A recent Techonomic Flavor Consumer Trend Report named flavor blends, regional American flavors, global flavor mash-ups, and hot, spicy foods among the top flavor trends for fast casual foodservice today. “Mash-ups” is the new term for fusion cuisine.

The Institute of Food Technologists predicts “Sweet + Heat”, along with “Sour, bitter, and tangy flavors,” will please consumers’ palates this year, reported Anderson Partners.

And if you’re serving Millennials (born 1980-2000), be aware that Millennials “are actively seeking out new flavors on a regular basis, and they’re looking for bold, spicy, adventurous flavors,” according to Technomic executive vice president Darren Tristano (quoted on getflavor.com). According to Marc Halperin of QSR magazine, Millennials “have a soft spot for ethnic mash-ups.” Millennial Marketing website calls Millennials “thrill-seekers who crave heightened eating experiences such as intense flavors and extreme textures.”
